Composition: 100% Pinot Noir (Calera/Swan clones)
Nose (aromas): tart currant, black olive, mulling spices
Flavor (palate): Spiced red apple, truffle, black pepper, cranberry
Winemaker’s Notes: Due to this wine’s firm acidity in its youth, I would recommend pairing it with foods that need an acidic balance. Try a fennel-garlic pork roast with cranberry sauce, or baked ziti with mushrooms, caramelized onions and goat cheese to align with the earthly qualities of this wine. Remember, acidity likes to have something to “cut through,” so some white meats and fowl tend to work, and also rich textures like goat cheese and creamy dishes.
Ageing Potential: Now – 2025+
Additional Notes: Because 2016 marks the maiden vintage of not only this wine, but the vineyard itself, I cannot give a perfect time frame for the ageing of this wine. However, with its low alcohol and stable pH, I have reason to think it will age gracefully. “Outlier” refers to to the fact that the vineyard lies alone, in the middle of the Sta. Rita Hills, with basically no near neighbors. In addition, the vineyard faces due north, a characteristic that I believe sets the vineyard apart from many others of its kind.
