Winemaker’s Notes: Cabernet Franc is one of our favorite Bordeaux varietals because we find it very diverse in both aromatics and flavor. Less fruity and floral, and more focus on savory and spicy qualities is the name of the game. Cabernet Franc loves anything roasted such as chicken or even turkey. Another route would be to accompany your main ingredient with something tomato-based (acidic), like a ratatouille to balance acidity. Don’t be afraid to add in herbs and spices to your cooking when pairing with this wine. Get creative!
Ageing Potential: Now-2032+
Additional Info: According to most recent DNA profiling and historical studies,the origin of Cabernet Franc is supposedly within the Basque country of Spain. In 1996, it was discovered by a pair at University of California Davis, that Cabernet Franc is actually the father to the now more popular Cabernet Sauvignon, with the mother plant being Sauvignon Blanc. Go figure!
